butternut squash mac & cheese

 from cooking light magazine 

4 cups (generous) Butternut Squash, cubed and peeled
2 cups reduced sodium Chicken Broth or reduced sodium Vegetable Broth
1 1/2 cups low fat Milk
1/4 cup plain 2% fat Greek Yogurt
1 1/2 teaspoons dry mustard
1 teaspoon Salt
1/2 teaspoon Black Pepper
1 cup shredded Gruyere Cheese
1 cup grated Pecorino Romano Cheese
1 cup grated White Cheddar Cheese
1 box (1 pound) large elbow noodles, cooked al dente


  1. Preheat oven to 375F.  In a large pot, combine cubed butternut squash and chicken broth and bring to a boil.  Reduce heat and simmer for 20-25 minutes, until squash is tender.
  2. Remove from heat. Add milk, Greek yogurt, dry mustard, salt, pepper and puree until smooth with an immersion blender. Stir in Gruyere and Romano cheeses until melted and then fold in pasta.  Pour everything into a large cast iron skillet or 13 x 9-inch baking dish lightly brushed with olive oil.
  3. Bake for 20 minutes. Remove from oven and turn oven to Broil (Low setting).  Sprinkle cheddar cheese over macaroni and return to oven for an additional 3-5 minutes until cheese has browned and some edges of noodles are crisp.

navajo fry bread

 

2 cups flour
2 tsp baking powder
1/2 tsp salt
1 1/4 cups warm milk
 
1. mix all together; let rest for 15 minutes. heat oil to boiling.
2. sprinkle flour over dough and hands. pull spoonful of dough out flat ~3-4" in diameter and slide vertically into hot oil. (dropping it flat into the pot will splash the oil on you). 
3. cook 2-4 minutes, turn, and cook again till golden brown. let cool a few minutes on paper towels.
 
also good sprinkled with cinna-sugar while hot or drizzled with honey for breakfast or dessert.

improvement

 

 

so.... take a look at this improvement. hercules, doing math problems, one week apart. one week of practice.

well parkville middle? one week? one on one attention to detail. tell me again that he is just being stubborn. tell me again that I am wrong.

after practicing, working on neatness, singular attention to detail.... he is writing equations in almost straight lines.

he had gone from 25% to 40% efficiency in his online math program and breaking the lesson into two 15-20 minute lessons has worked wonders.
 
 

 

what is real?

 

i am curious how common core is removing fiction from the language arts. so sayeth the teacher on back-to-school night.  fergus and i are both published fiction authors - and i don't mean blogging on our own sites. we are not famous. i was published only once, but PUBLISHED nonetheless. how can fiction be removed from everyday life? and why would the basic tenet of education want to do that? don't we live enough nonfiction every day? why can't our children be allowed to escape into a good fiction novel for schoolwork? no dickens? no huxley? no poe? no isamov? no beowulf?? no shakespeare??? what the ever-loving hell? lemme see how common core manages to get daily life into iambic pentameter. someone is gong to have to get published right quick on that one. go on. i am waiting.
 
yet... the first novel of the 7th grade year is to be a nonfiction autobiography about a man who thinks a magical sky fairy bestowed upon him the power to become a doctor. were it not for the magic fairy, he would not have managed. the author self-admits there is no way he could have taken this path without the guidance of the magic fairy. sounds pretty fictional to me. oh, but because it is a god and some people believe that kind of thing is real... makes it nonfiction. so we will be reading all about zeus too. and odin. and kokopelli. well... some people believe that is truth. so that makes those nonfiction as well, by the common core standards written right here.
 
what this novel really is about is a man who overcame stereotypical poverty and adversity, making his own path away from the people in his environment and becoming more than he ever thought possible through hard work and determination. he then used his great gifts to challenge not only the medical field, but the youth watching his path. he showed them that you are your own creator. you make your path and your choices define you. you can become greatness through your efforts and you can lead others that way as well. what a great message.
 
last year it was really tough to get my son to answer his required discussion questions. "god isn't real. he had the talents without praying about it. why can't he just take credit for his own hard work?" daughter watched this last year and has already decided to tell teacher "i decline to participate in this discussion. call my mother if you choose." good for her. i wouldn't want that nasty fiction messing up her view on reality, you know.
 
*rolls eyes* see, what i am upset about is the double talk. go ahead, read about gods and myths. learn about which ones are associated with which countries and their customs. i am ok with that. many generations of peoples have thrived with their religions. we might be really boring civilizations without them, what with no gods to argue about. but don't sit here and tell me that "fiction has been removed from the language arts curriculum" and then present a god as fact in the first novel. just don't.

this is what i mean

 this dog, i swear.

it's national dog day and we *would* have celebrated, but we actually have a cat: she doesn't play or do tricks or walk properly on a leash, doesn't fetch, doesn't protect us or our property, and is always yowling about being on the wrong side of the door.
so trixie wishes real dogs a happy dog day.

this. this is actually a cat. she sees nothing wrong with stopping my life and having a lie-in while I am kicking the laundry basket to the laundry room. like actively bumping her with the basket and telling her to move. and she laid down.

We filed our taxes electronically on 3 March 2014 and requested a payment schedule for the balance due of $2097.00, including the "failure to pay proper estimated tax."

We have never owed that much in taxes previously; we were confused about what to do next.  We provided a bank debit card number during the application process. The online application said that we would receive an installment agreement plan. Two figures ($360 and $522) were listed as installment amounts. I was unsure which amount would be automatically deducted, so I set aside $1000 in case both amounts were deducted at once.

We waited and waited.

No installment agreement plan arrived in the mail.

No payments were deducted.

On 10 June, I received a letter stating that since we had failed to make payments, the balance was due in 10 days. I called immediately that day and told the woman on the phone (employee/operator number 1306672) that we had the money set aside and I could make a payment right then and there – I was prepared to make two, but I didn’t know why our payments were never deducted. She said that we never paid the “initial draft account fee of $52.”

Nothing had been mailed to us requesting that amount.

I set up the initial draft account fee that day, drafted through our checking account with confirmation number 2x24-xxxx-47x5-xxxx. We then discussed the confusion on the payment amounts. She didn’t understand why two amounts were given to us and could not confirm the amount that would be deducted. I told her I preferred to take care of it more quickly and pay the higher amount of $522. She said that we would receive the installment agreement plan in the mail confirming the amount before deduction. I asked if I could preemptively make a payment by the due date of 20 June as a show of good faith. She said that was fine. I scheduled a payment, transferred on 20 June in the amount of $522.

On 25 June, I noticed that an additional payment of $360 was deducted from my debit card. (Please note that we still did not have an installment agreement plan.)  I immediately called and spoke to Ms. Taylor (operator/employee number 1307498) asking why two amounts were deducted. I explained the situation and after digging, she discovered that $360 was the installment plan amount and $522 was the projected pre-pay plan for tax year 2014. She noted that the $522 payment was not credited to tax year 2013. She advised that I wait until after the payment posted for tax year 2014, call back and ask them to move the amount from one account to the other. She said my balance due would then be $360 for July, August, and September, with a final payment of $106 in October.

On 30 July, I received a statement somehow dated 4 August 2014. It was the much-awaited annual installment agreement. It noted that we had accrued extra interest and penalties of $29.09 for failure to pay. I reject your penalty on the grounds that you failed to send the installment agreement at any time between 3 March and 4 August and only sent it after three payments totaling $1242.00 had been received by the Internal Revenue Service. Clearly, you received our information the first time, since you used the same debit card number provided in March, not the checking account routing number provided in June. When I looked over the statement, I saw the initial $360 payment posted on 20 June, but nothing further.

I called once again. This time Ms. Tindell (employee/operator number 1571579) informed me that the first payment of $522 could NOT be transferred from the 2014 tax year to the 2013 tax year.

At all. 

Ever. 

She then suggested that I write a letter and referred me only to the “contact information on the form.” She also stated that since it was the end of the work day (3:00 pm EST in Jacksonville FL) she was unable to connect me to a supervisor. She promised to write a note and have someone call me on 1 August. I was unsurprised to find that the phone call did not come.

Today, I waited over an hour on hold to speak to Ms. Krukowski (employee/operator number 1865423), who saw the prior notes on the account, told me that $522 was posted to 2014, and then asked “are you or your husband self-employed?” With my answer of no, she simply transferred $522 from 2014 to 2013. She informed me that it may take 2-3 weeks for it to show up in the billing cycle, but that it would show as a posting date of 19 June.

Why was this so difficult?

Please be advised that the final payment in October should reflect the removal of the failure-to-pay interest and penalties as referenced in bold above.  That makes the final payment in October $76.63.

the belt buckle

 

yesterday was such a horribly long day, i didn't get to sit down and post this.
 
i want to say thank you to the lady with the big belt buckle.
 
a lady who came through yesterday almost at the end of the shift required additional screening. i briefly explained what needed to happen, asked my required questions and then asked if she was wearing a belt. she was in the line where i had *just* said that everyone needed to remove belts. she didn't. so i had extra procedures to follow. she took off her belt in that way, you know, when you are annoyed and that last belt loop hangs on to the belt and you end up jerking the belt out and it flies away from you? yeah. that. she was clearly pissed about something and then walked away without her belt. i tried to give it to her three times, while she walked away slamming things and throwing bins. i couldn't figure out what had happened. she snapped at me and basically said she would come back and get it when she was good and ready. i asked her if she was donating her belt to charity as she turned to walk away, then she stepped back and snatched from my hand. i automatically said, "enjoy your flight." which is what i say to EVERYone. "i will try, but after all this, but i don't think i can!!" she yelled. she was on the verge of tears.
 
i went over that scenario in my head over the next 15 minutes trying to figure out what i did wrong. i was really upset. my co-workers said, "just drop it. you will never see her again. you didn't do anything wrong. some people just arrive at the airport itching for a fight." 
 
out of the blue, she approached me about 20 minutes later. 
 
"i want to apologize. i am usually really composed, but i snapped when i couldn't figure out why you were singling me out as suspicious." 
 
i must have looked like a fool. my mouth dropped open and i couldn't speak..
 
"suspicious? i didn't single you out. your belt buckle was the problem....i did tell you it was the belt... and belt buckles will continue to be problems so long as they are outside of the xray." i explained in more detail what the problem was and then i said, "if you are ever confused or want more information, please... please ask questions. anyone can answer your questions and if you still aren't sure, just ask for a supervisor." she thanked me for being gracious and kind even after she was rude to me and it made me realize that i _hadn't_ done anything wrong after all.... i had done everything right. for a change.
 
but i am sure she won't write and tell anyone above my pay grade. *sigh*
