herbed tuna w/tomatoes

 

6  large tomatoes
3  6-ounce cans tuna, drained
1/2  cup  fresh flat-leaf parsley leaves, roughly chopped
1/2 cup fresh basil, chopped
zest of 1 lemon
1/4  cup  fresh lemon juice
1  tablespoon  extra-virgin olive oil
1/4  teaspoon  black pepper
garlic, to taste
 

1.  remove stem end from each tomato. scoop seeds and pulp into bowl.

2.  combine remaining ingredients with tomato pulp.

3.  spoon carefully into hollowed-out tomatoes.

4.  NOM.
